Slow burning, high heat.  Oak is great for cooking with a medium flavor profile, nutty.  Use oak as a baseline flavor for cooking, and add the specialty flavors like hickory, cherry, or apple as desired.

Our Oak is usually red and white mixed together. Inquire about White Oak because we can separate the White from Red.
